This is one of my go-to breakfast, and I've been having them non-stop for the past week! It is super easy to make, and it's a lot healthier than your regular french toast for we won't be using eggs or sugar! Hope you give this recipe a try, and send me a pic while you're at it!
Here's what you'll need:
- 1 banana (mashed)
- 2 pieces of bread (I used whole wheat)
- A splash of milk (I used soy)
- 1 tsp. Vanilla Extract
- A dash of cinnamon
1. Combine the milk and the mashed bananas. Mix until they're completely combined. Keep adding milk until the consistency is very runny and there are little to no lumps of banana left.
2. Add the vanilla extract and the cinnamon and mix til combined.
3. Just like normal french toasts, coat both sides of the bread with the mixture.
Make sure not to put too much mixture on each side because the mixture wouldn't end up sticking to the bread when you put it on the pan.
5. Here's the fun part: toppings! I like to mix n match when it comes to toppings, I usually do different ones for different days. Here I put some blueberry flavoured yogurt to act as the 'icing', and I topped it all off with some flax seeds for a dash of protein.
